Baked spaghetti with creamy cheese sauce, sun-dried tomatoes, spinach, and BBQ chicken. Crispy, cheesy nests made easy with ready-made sauce and pre-cooked chicken. Perfect for a quick weeknight dinner, served with a fresh green salad.
Ingredients:
  • 250g dried Simply Spaghetti pasta
  • 425g tub Creamy Cheese Sauce, heated
  • 200g (2 cups) shredded barbecue chicken
  • 110g (1/2 cup) drained semi-dried tomato strips (undrained), plus 2 tbsp extra
  • 80g baby spinach
  • 50g (1/3 cup) pre-grated parmesan, plus 2 tbsp extra
  • 20.00 ml panko breadcrumbs
  • Fresh basil leaves and sprigs, to serve
Instructions:
  • Boil the pasta in a saucepan per package instructions until al dente. Save 1/2 cup of cooking water. Rinse the pasta under cold water until warm. Separate into 8 portions and place on a baking tray lined with baking paper. Allow to dry for 10 minutes.
  • In a large frying pan over medium heat, combine the cheese sauce, garlic, and reserved cooking water. Simmer, whisking occasionally. Add chicken, tomato, and spinach. Season with salt and pepper. Cook and stir for 1-2 minutes until heated through. Stir in parmesan until melted. Remove from heat and transfer 1 cup of the mixture to a heatproof bowl. Smooth the surface in the pan.
  • Wrap 1 portion of pasta around your fingers to create a nest that is 8cm wide. Gently place it on top of the chicken mixture in the pan. Repeat with the rest of the pasta portions until the surface is evenly covered. Fill the nests with the reserved chicken mixture. Mix breadcrumbs and extra parmesan in a small bowl, then sprinkle over the pasta nests. Generously spray the nests with olive oil spray.
  • Preheat the oven grill to high. Grill the dish for 3-4 minutes until the top is golden. Finish by scattering with extra semi-dried tomato and sprinkling with basil before serving. Be sure to watch our helpful video to learn how to make our Creamy Tuscan chicken spaghetti nests recipe.
