Creamy Tuscan chicken pasta

Creamy guilt-free pasta with light cream, tender chicken, and tangy semi-dried tomatoes.
Ingredients:
  • 13.80 gm olive oil
  • 300g chicken tenderloins
  • 60g (1/3 cup) semi-dried tomatoes
  • 2 garlic cloves, finely chopped
  • 6 large fresh sage leaves
  • 300ml light thickened cream
  • 400g dried linguine pasta
  • 250g baby spinach
  • 20g (1/4 cup) finely shredded parmesan
  • 1/2 lemon, juiced
  • Lemon wedges, to serve
Instructions:
  • In a frying pan over medium heat, heat 2 teaspoons of oil. Add the chicken and cook for 4 minutes on each side, or until cooked through. Transfer to a plate.
  • Off the heat, introduce tomatoes, garlic, sage, and the remaining oil into the pan. Stir for 30 seconds. Add the cream and return to medium heat, bringing it to a simmer. Reduce heat to low and simmer for 2 minutes until slightly thickened.
  • Prepare the pasta in a large saucepan of seasoned boiling water according to the package instructions until it is cooked to perfection.
  • Tear each tenderloin into 4 large pieces and place the spinach in a big colander over the sink.
  • Drain the cooked pasta over the spinach to allow the steam to wilt the greens.
  • Add the cooked pasta back to the saucepan along with the spinach, chicken, creamy mixture, half of the parmesan, and juice. Season with salt and pepper. Toss everything together until well combined. Distribute the pasta mixture among serving plates. Sprinkle the remaining parmesan on top. Serve right away with lemon wedges on the side.
