Indulge in homemade creamy Tuscan chicken with tender chicken, rich cream sauce, and pasta all cooked effortlessly in the Instant Pot®.
Ingredients:
  • 0.5 cup all-purpose flour
  • 2 teaspoons cantanzaro herbs (such as Savory Spice Shop®) or Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon granulated garlic
  • 4 (4 ounce) boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 red bell pepper, cut into matchsticks
  • 1 clove garlic, minced
  • 0.5 (16 ounce) package penne pasta
  • 2 cups heavy cream
  • 0.25 cup chicken broth
  • 0.5 cup white wine
  • 0.5 pound fresh spinach, stemmed
  • 1 cup grated Parmesan cheese
Instructions:
  • Preheat your multi-functional pressure cooker to the Saute function. Mix flour, cantanzaro herbs, salt, pepper, and garlic in a shallow bowl. Coat chicken in the mixture, shaking off any extra flour.
  • In a hot pot, melt butter with olive oil. Cook chicken until golden brown on both sides, about 3 minutes per side. Transfer chicken to a plate. Saute bell pepper and garlic until softened, for about 2 minutes, then transfer to a small silicone bowl.
  • Layer the pasta at the bottom of the Instant Pot® and drizzle heavy cream over it. Pour in the chicken broth and gently mix to coat all the pasta evenly.
  • Place the elevated steamer rack in the pot. Arrange the chicken on the rack and position the silicone bowl of peppers beside the chicken. Seal the lid securely. Cook on high pressure for 7 minutes following the manufacturer's guidelines. Allow pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for 15 minutes. Then carefully quick-release any remaining pressure for 5 minutes. Remove the chicken, peppers, and the elevated rack.
  • Activate the Saute function. Combine white wine with the cream sauce and incorporate spinach. Cook and stir until spinach wilts, about 2 to 4 minutes. Mix in Parmesan cheese until it melts. The sauce will thicken slightly upon cooling. Serve the pasta, sauce, and chicken together promptly.
