Instant Pot Tuscan soup with cannellini beans, Italian sausage, and kale. Easy and delicious!
Ingredients:
  • 2 tablespoons olive oil
  • 0.5 pound Italian-style chicken sausage, casings removed
  • 1.5 cups diced onion
  • 2 cloves garlic, minced
  • 1 (15 ounce) can white kidney beans (cannellini), rinsed and drained
  • 1 (32 ounce) carton Swanson® Chicken Broth (4 cups)
  • 3 cups finely chopped kale leaves
Instructions:
  • Heat oil in a 6-quart Instant Pot using the Saute setting. Cook sausage for 10 minutes or until well browned, stirring regularly to ensure even cooking. Turn off the Instant Pot.
  • Combine the onion, garlic, beans, Italian seasoning, and Swanson Chicken Broth in the pressure cooker. Secure the lid and seal the pressure release valve. Cook on High pressure for 3 minutes (timer starts when pressure is reached, which usually takes around 10 minutes).
  • Press Cancel and release the pressure using the quick-release method.
  • Add the kale and allow it to sit for 5 minutes. Season to your liking and top with a sprinkle of cheese.
