Instant Pot Tuscan chicken for two with sun-dried tomatoes, spinach, and Parmesan.
Ingredients:
  • 1 tablespoon salted butter
  • 1 tablespoon herb-infused olive oil
  • 1 (5 ounce) skinless, boneless chicken breast, cut in bite-sized pieces
  • 1.5 teaspoons garlic granules
  • 0.5 teaspoon dried oregano
  • 1.25 cups chicken broth
  • 0.75 cup farfalle pasta
  • 0.5 cup heavy whipping cream
  • 2 cups roughly chopped fresh spinach
  • 0.25 cup julienned sun-dried tomatoes in oil, drained
  • 1 cup freshly shaved Parmesan cheese, or to taste
  • 1 1/2 teaspoons Italian-style soffrito seasoning blend (such as Trader Joe's®)
Instructions:
  • In a multi-functional pressure cooker (like Instant Pot) on Saute mode, melt butter with oil. Add chicken, garlic, and oregano; saute until chicken is golden brown, about 5-7 minutes.
  • Add the chicken broth to the pot and bring it to a boil, making sure to scrape up the delicious browned bits with a wooden spoon. Next, stir in the pasta and whipping cream before topping it with spinach and sun-dried tomatoes. Finally, press Cancel.
  • Seal the lid securely and set Instant Pot to high pressure for 10 minutes. Let pressure naturally build for 10 to 15 minutes.
  • Allow the pressure to naturally release for 15 minutes following the manufacturer's instructions, then quickly release any remaining pressure. Unlock and remove the lid.
  • Blend 1 cup of Parmesan cheese until smooth and creamy. Sprinkle with flavorful soffrito seasoning and sprinkle with more cheese for added indulgence. Serve promptly for optimal enjoyment.
