Instant Pot® Corn Chowder ready in under 15 minutes with Saute function for quick pressure building. Reduce overall cook time effortlessly.
Ingredients:
  • 1 medium yellow onion, chopped
  • 2 cups frozen corn
  • 2 cups chicken broth
  • 1 (12 fluid ounce) can evaporated milk
  • 0.5 cup instant potato flakes
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon dried chives
  • salt and ground black pepper to taste
Instructions:
  • Preheat your Instant Pot® on Saute mode. Sauté onions in butter until lightly browned, about 5 minutes. Add corn and chicken broth, then switch off Saute mode.
  • Securely seal the lid and set the pressure release valve to high pressure. Set the timer for 5 minutes and wait for the pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for quick-release method to release pressure safely for about 5 minutes. Unlock and remove the lid, then add evaporated milk, potato flakes, thyme, garlic, chives, salt, and pepper. Stir well and serve immediately.
