Elevate classic cocktail meatballs by swapping grape jelly for apricot preserves or get creative with orange marmalade or cranberry sauce.
Ingredients:
  • 1 (12 ounce) jar apricot preserves
  • 1 (12 ounce) bottle hickory-flavored barbecue sauce
  • 0.5 teaspoon crushed red pepper
  • 24 ounces frozen cocktail-size meatballs
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot®) using the Saute function. Combine apricot preserves, barbecue sauce, water, and crushed red pepper, then whisk together. Add meatballs and stir until coated.
  • Secure the lid and ensure it's locked; set the venting knob to sealing position. Choose high pressure as per manufacturer's guidelines and set the timer for 5 minutes. Let pressure build for 10 to 15 minutes.
  • Following the manufacturer's instructions, safely release the pressure using the quick-release method for about 5 minutes. Unlock and lift the lid off the pot.
  • Present the meatballs on a platter with toothpicks and sprinkle on extra crushed red pepper, as desired.
