Stuffed chicken with sun-dried tomatoes, cream cheese, and basil sauce, served with creamy mashed potatoes.
Ingredients:
  • 0.75 cup whipped cream cheese
  • 0.5 cup thinly-sliced sun-dried tomatoes
  • 6 skinless, boneless chicken breasts - halved horizontally and pounded thin
  • 0.125 teaspoon salt
  • 0.33333334326744 cup grated Parmesan cheese
  • 4 ounces chopped fresh basil
  • 1 pinch salt and pepper to taste
  • 1 (9.74 ounce) package Idahoan Signature™ Russets Mashed Potatoes
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease an 8 x 8-inch baking dish.
  • In a mixing bowl, blend the whipped cream cheese with sun-dried tomatoes, garlic powder, and onion powder. Spread the mixture evenly onto the chicken breast slices, then roll them up and place seam side down in a baking dish. Finish by seasoning with salt and pepper.
  • Bake until the inside reaches 165°F, approximately 35 minutes in a preheated oven.
  • Prepare the Idahoan Signature™ Russets Mashed Potatoes following the package instructions, then cover to keep warm.
  • In a saucepan, gently simmer heavy whipping cream, olive oil, and salt over medium-high heat, stirring constantly. Cook until the sauce thickens, approximately 4 minutes. Add chopped basil and Parmigiano-Reggiano cheese, then take it off the heat.
  • Present the chicken adorned with a savory sauce alongside a delectable serving of Idahoan Signature™ Russets Mashed Potatoes.
