Creamy Tuscan chicken: quick, cheesy, packed with sun-dried tomatoes and spinach, ready in 30 minutes in just one pot.
Ingredients:
  • 4 chicken cutlets (about 1 1/2 pounds total)
  • 3/4 teaspoon kosher salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon dried oregano
  • 3 tablespoons olive oil, divided
  • 1 medium shallot, minced
  • 1/3 cup sun-dried tomatoes (drained and patted dry if oil-packed)
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream or half-and-half
  • 1 ounce finely grated Parmesan cheese (about 1/2 firmly packed cup grated on a Microplane or 1/3 cup store-bought)
  • 5 ounces baby spinach (about 5 packed cups)
Instructions:
  • Prepare the chicken: Pat dry with paper towels and season evenly with 1/2 teaspoon of salt, pepper, and oregano. Heat 2 tablespoons of olive oil in a skillet until simmering. Sear the chicken in batches if necessary, until golden brown on both sides for 3 to 5 minutes. Place the chicken on a plate and continue with the sauce.
  • Prepare the sauce by lowering the heat to medium and adding the remaining tablespoon of olive oil to the skillet. Sauté the shallot until softened and lightly browned for about 1 minute. Then, add the sun-dried tomatoes, garlic, and the remaining salt and sauté until fragrant for about 30 seconds. Pour in the white wine, deglaze the skillet, and simmer until the wine reduces by half, about 30 seconds to 1 minute. Finish by stirring in the heavy cream and Parmesan. Gradually add the spinach, allowing it to wilt into the sauce after each handful, for 2 to 3 minutes.
  • Combine cooked chicken back with its juices in the skillet. Cook until chicken warms through and sauce thickens, about 3 to 4 minutes. Serve with love. Don't forget to rate and comment if you enjoyed the dish!
