Creamy Tuscan chicken with sun-dried tomatoes and garlic - a tasty keto meal.
Ingredients:
  • 1.5 pounds skinless, boneless chicken breasts, thinly sliced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup spinach, chopped
  • 0.5 cup chopped sun-dried tomatoes
Instructions:
  • In a large skillet over medium-high heat, sizzle the chicken in olive oil until golden and cooked through, about 3 to 5 minutes per side. Transfer the chicken to a plate and set aside.
  • Combine heavy cream, chicken broth, Parmesan cheese, garlic powder, and Italian seasoning in the skillet. Stir the sauce over medium-high heat until it begins to thicken, approximately 5 minutes. Introduce spinach and sun-dried tomatoes; simmer until the spinach starts to wilt, about 1 minute. Reintroduce chicken to the skillet and cook until heated through, approximately 2 to 3 minutes.
