Simplify your cooking with our delicious Tuscan chicken loaded with tangy olives and keto-friendly veggies from a jar.
Ingredients:
  • 1kg chicken pieces on the bone
  • 1 brown onion, thickly sliced
  • 5.00 gm ground paprika
  • 125g semi-dried tomatoes
  • 320g jar grilled eggplant, drained, chopped
  • 280g jar chargrilled peppers (capsicum), drained, thickly sliced
  • 160g olive
  • 125ml thickened cream
  • 375ml salt
  • 62.50 ml coarsely chopped oregano
Instructions:
  • Preheat the oven to 150°C. In a large flameproof roasting pan over high heat, brown half of the chicken by cooking and turning occasionally for about 5 minutes until golden. Transfer the browned chicken to a heatproof bowl and repeat with the remaining chicken.
  • Saute the onion in the pan until softened, about 5 minutes. Stir in the garlic and paprika, cook until fragrant. Add the chicken back to the pan along with tomatoes, eggplant, capsicum, olives, cream, stock, and oregano. Simmer briefly, then remove from heat.
  • Bake covered for 1 1/4 hours, stirring occasionally, until the chicken is tender and the sauce slightly thickens. Season before serving.
