Delicious Tuscan-style hunter's chicken with caramelized onions, capers, olives, tomatoes, and basil.
Ingredients:
  • 12 green olives, pitted
  • 1 stalk celery, chopped
  • 2 onions, sliced
  • 0.5 cup water
  • 2 teaspoons white sugar
  • 1 tablespoon extra-virgin olive oil
  • 1 (2 pound) whole chicken, cut into pieces
  • 4 ripe tomatoes, diced
  • 1 bunch fresh basil, chopped
  • 1 lemon, juiced
  • 2 tablespoons capers
  • 0.25 cup extra-virgin olive oil, or to taste
  • 5 potatoes, peeled and cubed
Instructions:
  • Bring a small pot of water to a boil. Add olives and celery and simmer for 30 seconds until the celery turns bright green. Drain thoroughly.
  • In a saucepan over medium heat, caramelize onions with water and sugar, stirring occasionally, for about 30 minutes until soft and golden.
  • In a large skillet over medium heat, add a generous drizzle of olive oil. Sear the chicken pieces until they develop a golden-brown crust, around 4 minutes per side.
  • Place the chicken pieces in a large saucepan and combine with olives, celery, caramelized onions, tomatoes, basil, lemon juice, capers, salt, and pepper. Cover and simmer over medium heat for about 1 hour until chicken is cooked through.
  • In a deep skillet, warm up 1/4 cup of olive oil. Cook and stir potatoes until they are crispy and golden brown, which should take about 10 minutes. Just before removing from heat, stir the potatoes into the saucepan.
