Delicious, simple chicken stew infused with sazón and sofrito for flavor.
Ingredients:
  • 1 whole chicken, cut up
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 0.5 cup sofrito
  • 2 potatoes, peeled and cubed
  • 2 cups chicken broth
  • 1 (8 ounce) can tomato sauce
  • 1 (1.41 ounce) package sazon seasoning
  • 0.5 teaspoon ground cumin
  • 2 tablespoons cold water
  • 1 tablespoon cornstarch
Instructions:
  • In a Dutch oven over medium-high heat, sizzle the olive oil until shimmering. Season the chicken generously with salt and pepper, and sear in the pot until golden brown on each side, about 6 to 7 minutes per side. Remove the chicken to a bowl and loosely cover with aluminum foil to keep warm.
  • Once the heat is lowered to medium, let the onion sizzle in the pot until it turns translucent, approximately 5 minutes. Mix in garlic and allow it to cook for 1 minute. Introduce the sofrito to the mix, cooking for an additional 2 to 3 minutes. Include potatoes, chicken broth, tomato sauce, sazón, cumin, and bay leaf, and bring the mixture to a boil.
  • Place the chicken back into the pot, cover, and let it simmer for 1 hour. Then, carefully remove the chicken from the pot.
  • Combine water and cornstarch in a small bowl, then stir into simmering mixture until it thickens. Add chicken back to the pot and cook together for an additional 10 minutes.
