Pollo Guisado (Dominican Stewed Chicken)

Experience the bold flavors of Dominican Republic with delicious pollo guisado chicken dish.
Ingredients:
  • 1 (3 to 3 1/2 pound) whole chicken, skin removed and cut into pieces
  • 0.25 cup rancho adobo sazon criollo, or to taste
  • 1 red onion, chopped into large pieces
  • 2 Cubanelle peppers, chopped
  • 0.25 cup sazon liquido
  • 1 tablespoon garlic paste
  • 0.33333334326744 cup vegetable oil
  • 1 tablespoon light brown sugar
  • 0.33333334326744 cup tomato paste
  • 1 stalk celery, chopped
  • 2 tablespoons chicken bouillon powder, or more to taste
  • 1 cup water
Instructions:
  • In a bowl, generously season chicken pieces with ranchero sazon criollo. Add onion, Cubanelle peppers, sazon liquido, and garlic paste. Mix well to ensure chicken is evenly coated.
  • Pour oil into the bottom of a heavy pot. Sprinkle brown sugar over the oil without stirring. Heat over medium-high heat until the sugar turns very dark brown, about 5 to 10 minutes. Gently add chicken pieces individually, setting aside the vegetables and any remaining liquid. Coat each chicken piece with the sugar-oil mixture by stirring. Cover and cook for 8 to 10 minutes.
  • Stir in the reserved vegetables, water, tomato paste, celery, and bouillon powder. Cover the pot, reduce heat to medium-low, and simmer until chicken is cooked and tender, 15 to 30 minutes.
