Try these Tuscan-style beans for a shortcut: serve in a jar for a rustic touch.
Ingredients:
  • 36.40 gm olive oil
  • 140g pancetta, chopped
  • 2 celery stalks, finely chopped
  • 1 carrot, finely chopped
  • 2 garlic cloves, chopped
  • 2 bay leaves
  • 2 x 400g cans cannellini beans, rinsed, drained
  • 150ml white wine
  • 300ml chicken style liquid stock
  • 40.00 ml flat-leaf parsley leaves, chopped
Instructions:
  • In a skillet over medium heat, warm up the oil. Cook the pancetta until slightly crispy, about 3-4 minutes. Add in the celery, carrot, garlic, and bay leaf, and cook until softened, approximately 2-3 minutes.
  • Add the cannellini beans and wine, simmer for 3-4 minutes until reduced. Stir in the stock and cook for 10-15 minutes until thickened and reduced.
  • Garnish with fresh parsley and transfer to a large serving jar or bowl.
