Tuscan white beans in savory tomato sauce with sage and garlic, a versatile side dish.
Ingredients:
  • 1.25 cups dry cannellini beans
  • 1 teaspoon baking soda
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, peeled and crushed
  • 1 sprig fresh sage
  • 1.5 cups tomato sauce
Instructions:
  • In a large pot, add beans and cover with water. Stir in baking soda and let it soak at room temperature for 8 to 12 hours.
  • After draining and rinsing the beans, place them back in the pot. Fill the pot with water and bring it to a boil over medium-high heat. Simmer gently until the beans are tender but still slightly firm, which should take around 25 minutes. Once ready, drain the beans while saving the cooking water. Keep both the beans and the flavorful cooking liquid aside for further use.
  • In a pot over medium heat, add olive oil. Sauté garlic and sage until fragrant, around 2 minutes. Mix in beans until they soak up the flavors of garlic and sage.
  • Pour in the tomato sauce and bring it to a gentle simmer. Cook, stirring occasionally, until the beans are tender but still firm, about 10 to 15 minutes. If the sauce starts to thicken too much, add some of the reserved cooking water to prevent burning. Season with salt and pepper to taste. Serve the dish warm.
