Braised Tuscan cabbage & beans

Delicious Tuscan side dish with cavolo nero, salty bacon, and buttery beans.
Ingredients:
  • 36.40 gm olive oil
  • 1 rindless bacon rasher, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 4 drained anchovy fillets
  • 2 bunches Tuscan cabbage, stems removed, leaves thinly sliced (see notes)
  • 125ml (1/2 cup) water
  • 400g can cannellini beans, rinsed, drained
  • 21.00 gm fresh lemon juice
Instructions:
  • In a large frying pan over medium heat, sizzle 1 teaspoon of oil. Stir in bacon and cook for 4 minutes until crispy and golden, stirring constantly.
  • Sauté garlic and anchovies in 3 teaspoons of oil until aromatic. Add Tuscan cabbage, more oil, and cook until tender. Stir in beans, lemon juice, salt, and pepper. Enjoy!
