Transport yourself to Tuscany with this mouthwatering beef stew cooked in a slow-cooker. Rich flavors of tomatoes, herbs, and wine infuse the tender beef and vegetables creating a delicious aroma. Serve with pappardelle pasta and garlic bread to savor every last drop of the sauce.
Ingredients:
  • 2 x 500g pieces Carbon Neutral Australian Premium Beef Slow Cook Chuck Roast
  • 36.40 gm extra virgin olive oil
  • 2 brown onions, cut into thick wedges
  • 8 garlic cloves, peeled
  • 40.00 ml fresh rosemary leaves
  • 70g (1/4 cup) tomato paste
  • 250ml (1 cup) dry red wine
  • 250ml (1 cup) Beef Liquid Stock
  • 20.00 ml balsamic glaze
  • 20.00 gm cornflour
  • 110g (1/2 cup) drained semi-dried tomatoes
  • Cucina Matese Egg Pappardelle pasta, cooked, to serve
  • Coles Garlic Bread, cooked, to serve
  • Fresh basil leaves, to serve (optional)
Instructions:
  • Trim excess fat from beef and generously season with salt and pepper. Heat half of the oil in a large frying pan over high heat. Sear the beef on all sides for 5-6 minutes until golden brown. Transfer the beef to a slow cooker.
  • In the same pan over medium heat, gently heat the remaining oil. Add the onion and garlic, cook while stirring occasionally for 2-3 minutes until they start to brown. Introduce the rosemary, cook and stir for another minute until aromatic. Mix in the tomato paste, pour in the wine, and cook for 2-3 minutes until the liquid reduces by half.
  • Pour in the stock and bring it to a gentle simmer. Mix in the balsamic glaze and season to taste. Transfer the onion mixture to a slow cooker and cook covered on low for 7 hours or on high for 3 1/2 hours, until the beef is tender.
  • In a small jug, mix cornflour and 2 tablespoons of water. Using two forks, shred the beef in the slow cooker. Add the cornflour mixture and semi-dried tomatoes to the beef, then stir to combine. Cover and cook on low for an additional 30 minutes (or high for 15 minutes) until the sauce thickens.
