Slow-Cooker Tuscan Bean Soup

Cozy up with a comforting slow cooker soup for chilly days.
Ingredients:
  • 1 lb small red potatoes, cut into fourths (about 3 cups)
  • 4 medium carrots, sliced (2 cups)
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 2 cans (15 to 16 oz each) great northern beans, drained, rinsed
  • 3 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 2 cups diced fully cooked ham
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive or vegetable oil
Instructions:
  • Combine all ingredients in a 3- to 4-quart slow cooker, leaving out the parsley and oil.
  • Cook the dish over a gentle Low heat setting for 8 to 10 hours.
  • Before serving, gently fold in the fragrant parsley and drizzle in the luxurious oil.
