Savor a hearty Italian turkey bean soup, crafted from scratch with soaked dried beans, smoked turkey legs, veggies, and fragrant Italian seasonings. Perfect for a cozy slow cooker meal.
Ingredients:
  • 1 pound dry white beans
  • 2 smoked turkey legs
  • 0.5 onion, diced
  • 2 bay leaves
  • 2 stalks celery, diced
  • 4 large carrots, sliced
  • 1 (14.5 ounce) can petite diced tomatoes, undrained
  • 2 tablespoons Italian seasoning
  • salt and ground black pepper to taste
  • 2 tablespoons grated Parmesan cheese, divided
Instructions:
  • In a large bowl, place the beans and cover them with water. Secure with a cloth and soak overnight.
  • After draining and rinsing the beans, transfer them to a large soup pot. Add turkey legs, onion, and bay leaves to the pot. Cover everything with water and bring to a boil over medium heat. Lower the heat to medium-low and simmer for 3 hours.
  • Discard the bay leaves. Remove the turkey legs from the broth, separate the meat from the bones and tendons, and add the meat back to the broth.
  • Combine celery, carrots, diced tomatoes, Italian seasoning, salt, and pepper in the pot. Let it simmer until the vegetables are tender, approximately 1 hour.
  • Ladle soup into bowls and generously sprinkle each serving with a teaspoon of Parmesan cheese for a delicious finishing touch.
