Flavorful Tuscan Chicken Pasta Skillet made with marinated chicken breast, spaghetti, tomatoes, artichokes, olives, Parmesan cheese, and herbs. Perfect for a quick and tasty weekday meal.
Ingredients:
  • For the marinade:
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried Italian seasoning
  • For the dinner:
  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 12 ounces cherry tomatoes (about 2 cups), halved
  • 1 tablespoon minced garlic
  • 8 ounces spaghetti
  • 1/2 teaspoon kosher salt
  • 1 cup quartered marinated artichokes hearts, drained
  • 1/3 cup Kalamata olives, pitted and sliced
  • 1/4 cup freshly grated parmesan cheese
  • 6 basil leaves, thinly sliced
  • 2 teaspoons chopped fresh parsley (optional)
Instructions:
  • Prepare the chicken marinade: Mix 1/4 cup olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, and Italian seasoning in a small bowl. Cut each chicken breast in half horizontally and place them in a shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Allow the chicken to marinate for 15 minutes before cooking.
  • Sear the chicken in a hot skillet with olive oil until both sides are golden brown and fully cooked, about 6 to 8 minutes per side. Rest the chicken on a cutting board while preparing the pasta.
  • Prepare a flavorful pasta sauce by combining tomatoes, garlic, spaghetti, 4 cups water, and 1/2 teaspoon salt in a skillet. Boil the mixture over high heat until the pasta is tender and most of the water has evaporated—approximately 9 to 11 minutes. Aim for a light sauce by leaving a small amount of water in the pan. For a softer pasta, add additional water in 1/2-cup increments if necessary. Once cooked, turn off the heat.
  • Cut the chicken into thin 1/4-inch slices. Combine with artichoke hearts, olives, Parmesan cheese, and basil. Toss everything together. For a richer sauce, stir in 1 or 2 tablespoons of butter. Season with salt and pepper to taste.
  • Serve the pasta by sprinkling it with fresh parsley and then divide it among plates to be served warm.
