All-in-one Tuscan chicken pasta bake recipe

Satisfying Tuscan chicken pasta dish with flavorful blend of chicken, cheese, veggies. Perfect for using leftovers and feeding hungry families.
Ingredients:
  • 300g dried fusilli (spiral) pasta
  • 50g butter
  • 3 garlic cloves, crushed
  • 4 fresh thyme sprigs, leaves picked
  • 300ml carton cooking cream
  • 250ml (1 cup) milk
  • 280g jar sun-dried tomato strips, drained
  • 150g (1 1/2 cups) shredded cooked chicken
  • 120g packet baby spinach
  • 40g (1/4 cup) pre-grated parmesan
  • 155g (1 1/2 cups) pre-grated pizza cheese
Instructions:
  • Preheat oven to 200C/180C fan forced. Boil pasta in salted water until al dente following package instructions. Save 125ml (1/2 cup) cooking liquid, then drain.
  • In a medium heat pan, melt butter until sizzling. Add onion and garlic, cook for 5 minutes until tender. Mix in flour and thyme until blended. Slowly pour in cream, milk, and reserved liquid while stirring until creamy. Bring to a boil and simmer for 2 minutes until slightly thickened.
  • Combine tomato, chicken, spinach, Parmesan, and 55g (1/2 cup) pizza cheese in a skillet. Season to taste. Sauté for 2 minutes until spinach wilts. Transfer mixture to a 2.5L (10 cup) baking dish. Top with remaining pizza cheese. Bake for 25 minutes until golden and heated through. Serve hot.
