Delicious Tuscan-style bake with chicken, rice, cream, cheese, and semi-dried tomatoes. Easy weeknight meal - prep, bake, enjoy flavorful magic! Choose between moist thigh fillets or pretty chicken breast.
Ingredients:
  • 2 chicken breast fillets (or 4 chicken thigh fillets)
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 275g (1 1/4 cups) medium-grain white rice
  • 170g (3/4 cup) drained semi-dried tomatoes, chopped
  • 375ml (1 1/2 cups) Chicken Style Stock
  • 300ml thickened cream for cooking
  • 60g baby spinach leaves
  • 100g (1 cup) pizza cheese
  • Basil leaves, to serve
Instructions:
  • Preheat oven to 190°C (170°C fan forced).
  • In a frying pan over medium heat, heat half of the oil. Sear the chicken on each side for about 3 minutes until golden brown. Rest the chicken on a cutting board to cool slightly. Add the rest of the oil to the pan, then sauté the onion until soft and golden for about 5 minutes. Stir in the garlic and rice, cooking for an additional 30 seconds. Transfer everything to an 8-cup-capacity ovenproof dish.
  • Chop the chicken into bite-sized pieces. Mix it with tomatoes and rice in a dish. In a frying pan, combine stock and cream, bringing it to a simmer over medium heat. Pour this mixture over the rice. Season, cover the dish tightly with foil, and bake for 30 minutes until rice is tender.
  • Take dish out of the oven, and switch the oven grill to high setting. Gently remove the foil to let steam escape. Fold in spinach leaves in 2 batches as they will wilt in the heat. Sprinkle cheese on top of the dish. Put it under the grill for 3 minutes or until it turns golden brown. Finish by topping with basil before serving.
