Cheesy beef and potato casserole with tomatoes - a satisfying, all-in-one meal.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 clove garlic, finely chopped
  • 2 2/3 cups water
  • 1/4 cup butter or margarine
  • 1 teaspoon salt, if desired
  • 2 tablespoons instant minced onion
  • 1 teaspoon dried oregano leaves
  • 2/3 cup milk
  • 2 cups Betty Crocker™ mashed potatoes
  • 3 to 4 medium tomatoes, sliced
  • 4 oz mozzarella cheese, shredded or sliced
Instructions:
  • Preheat your oven to 350°F. Grease or spray a 11x7-inch (2-quart) glass baking dish. In a 10-inch skillet, cook the beef with 1 teaspoon of salt, pepper, and garlic over medium heat, stirring occasionally, until the beef is browned; then drain any excess grease.
  • In a 3-quart saucepan, bring water, butter, 1 teaspoon salt, onion, and oregano to a boil. Take off the heat. Mix in milk and dry potatoes until just moistened. Allow to sit for about 30 seconds to absorb the liquid, then fluff with a fork. Transfer half of the potato mixture to a baking dish. Layer with beef and half of the tomatoes. Top with the rest of the potatoes and tomatoes, then sprinkle with cheese.
  • Bake for about 30 minutes until hot and bubbly, leaving it uncovered for a perfectly golden finish.
