Create a customizable and nutritious bean and veggie snack that can be enjoyed anytime for breakfast, a snack, or a simple dinner.
Ingredients:
  • 125g can four bean mix, rinsed, drained
  • 1 small vine-ripened tomato, finely chopped
  • 20.00 ml chopped fresh continental parsley leaves
  • 1 tsp balsamic vinegar
  • 1 slice (about 45g) wholegrain sourdough bread, toasted
  • 1/4 small avocado, mashed
  • 4.60 gm extra virgin olive oil
Instructions:
  • In a bowl, mix together the beans, tomato, fresh parsley, and vinegar. Season to taste.
  • Spread creamy avocado over your crispy toast, generously top it with the flavorful bean mixture, and finish it off with a drizzle of luscious oil before serving.
