Italian chicken sausage soup with squash, beans, tomatoes, and spinach in a flavorful broth with red wine - quick, satisfying.
Ingredients:
  • 0.75 pound Italian chicken sausage links, casings removed and sausages cut into 1/4-inch pieces
  • 1 onion, chopped
  • 1 yellow squash, sliced
  • 2 cloves garlic, pressed
  • 1 (32 ounce) carton chicken broth
  • 2 (15 ounce) cans white beans, drained and rinsed
  • 1 (15 ounce) can Italian-style diced tomatoes
  • 2 cups baby spinach leaves
  • 0.33333334326744 cup red wine
  • 1 teaspoon Italian seasoning
  • 3 tablespoons grated Pecorino-Romano cheese
Instructions:
  • In a large pot over medium-high heat, brown the sausage until cooked through, about 5 to 7 minutes. Remove and discard any excess grease.
  • Sauté onions with sausage until translucent, around 5 minutes. Mix in squash and garlic; cook until garlic is aromatic, about 1 minute.
  • Combine broth, beans, and tomatoes in a pot, stirring gently. Mix in spinach, red wine, and Italian seasoning. Simmer soup until hot, approximately 15 minutes.
  • Serve the soup in bowls and top it with a sprinkle of savory Pecorino Romano cheese.
