Delicious and filling Tuscan bean soup to cozy up with.
Ingredients:
  • 1 leek, trimmed, halved, washed, sliced
  • 44.40 gm tomato paste
  • 1020.00 gm chicken style liquid stock
  • 400g can borlotti beans, drained, rinsed
  • 400g can cannellini beans, drained, rinsed
  • 80g baby spinach
Instructions:
  • In a large saucepan over medium heat, warm the oil. Sauté the leek for 5 minutes until softened. Stir in the garlic and paste, cooking for 1 minute until fragrant. Add the tomato, stock, and 1 cup of cold water.
  • Mash half of the beans with a fork and add them to the pan. Bring to a boil, then reduce heat to low. Simmer partially covered for 30 minutes or until slightly thickened.
  • Add the fresh spinach and the rest of the beans to the pan. Sauté for 3 minutes or until everything is heated. Serve and enjoy!
