Italian-inspired twist on classic Tex-Mex burritos, served with tangy Greek yogurt for a fun and interactive family meal perfect for a Thursday night.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 500g beef mince
  • 3.13 gm Tuscan seasoning
  • 1/2 large avocado, stone removed, peeled
  • 70g (1/4 cup) Greek-style natural yoghurt
  • 8 flour tortillas
  • 1/2 cos lettuce, leaves shredded
  • 200g tomatoes, coarsely chopped
Instructions:
  • In a spacious non-stick frying pan, warm the oil over medium-high heat. Sauté the onion until soft, about 3 minutes. Add the mince and seasoning. Raise the heat to high and cook for about 6 minutes until the mince changes color, stirring occasionally to break up any lumps.
  • In a small bowl, smash the avocado and mix in the yoghurt. Heat the tortillas according to the package instructions.
  • Transfer the flavorful mince mixture to a stylish serving bowl. Enjoy alongside a delightful avocado mixture, fresh tortillas, crisp lettuce, and juicy tomato.
