Tuscan beef steaks with char-grilled vegetables

Savor a simple and nutritious beef meal atop flavorful grilled veggies.
Ingredients:
  • 4 x 200g beef porterhouse steaks
  • 60.00 ml garlic infused olive oil
  • 40.00 ml fresh rosemary, finally chopped
  • 2 medium zucchinis, sliced thinly lengthways
  • 2 medium red capsicums, quartered
  • 1 medium sweet potato, sliced thinly into rounds
  • 2 large tomatoes, sliced thickly into rounds
  • Salt and cracked black pepper to taste
  • 56.88 gm extra virgin olive oil
  • Juice of half a lemon
  • 40.00 ml fresh parsley, finely chopped
Instructions:
  • Coat steaks generously with 2 tbsp of aromatic garlic-infused olive oil, fragrant chopped rosemary, and a perfect seasoning of salt and pepper.
  • Heat the barbecue flat-plate or char-grill until hot. Cook the vegetables on one side for a few minutes until done. Place the steaks on the other side and grill for 2-3 minutes per side or until they reach your desired level of doneness. Remove the steaks from heat and let them rest covered with foil for 5 minutes.
  • Mix together the olive oil, lemon juice, parsley, and season to taste.
  • Arrange a colorful heap of vegetables on plates and generously drizzle with dressing. Trim any remaining fat from the cooked steaks, thinly slice against the grain, and elegantly place on top of the vegetables before serving.
