Slow-Cooker Tuscan-Style Chicken Sandwiches

Transport yourself with a Mediterranean-inspired Pesto Chicken Focaccia loaded with colorful bell peppers and juicy tomatoes.
Ingredients:
  • 1 1/4 lb. (about 6) boneless skinless chicken thighs
  • 2 garlic cloves, minced
  • 1/2 cup roasted red bell pepper (from a jar), cut into bite-sized strips
  • 1/4 cup mayonnaise
  • 3 tablespoons purchased pesto
  • 1 (10-inch) focaccia (Italian flat bread)
  • 6 slices tomato
Instructions:
  • Add the chicken thighs to a 3 1/2 or 4-quart slow cooker, then generously season them with garlic, roasted pepper strips, and salt.
  • Cover and simmer gently on Low setting for 6 to 7 hours.
  • Before serving, elegantly transfer the tender chicken from the slow cooker to a large plate. Use two forks to effortlessly shred the juicy chicken, then gently mix it back into the flavorful sauce in the slow cooker.
  • Combine mayonnaise and pesto in a small bowl until well blended. Cut the focaccia into 6 wedges and split each in half. Spread the cut sides with the mayonnaise mixture. Spoon about 1/3 cup of the chicken mixture onto the bottom half of each focaccia wedge using a slotted spoon. Add a tomato slice on top and cover with the other half of the focaccia.
