No Yolks Tuscan Braised Chicken with Noodles

Prep chicken, veggies, and sauce ahead to effortlessly bake a delicious meal after work.
Ingredients:
  • 2 teaspoons olive oil
  • 8 boneless, skinless chicken thighs
  • Pinch salt
  • Pinch ground black pepper
  • 8 ounces sliced cremini or white mushrooms
  • 1.5 cups baby carrots
  • 1 onion, sliced
  • 2.3333332538605 cups basil and olive pasta sauce
  • 0.5 cup white wine or sodium-reduced chicken broth
  • 0.5 (12 ounce) package NO YOLKS® Extra Broad Noodles
  • 1 teaspoon Chopped fresh parsley
  • 1 pinch Grated Parmesan cheese
Instructions:
  • Preheat the oven to 350°F (180°C). Heat oil in a nonstick skillet over medium-high heat. Season chicken with salt and pepper, then brown in batches in the skillet.
  • Place the chicken in a 10 cup (2.5 L) casserole dish. Sprinkle the mushrooms, carrot, and onion on top. Mix the sauce with the wine and pour over the casserole. (Prepare in advance and store covered in the refrigerator for up to 1 day.)
  • Begin by baking covered for 30 minutes before uncovering and baking for another 30 minutes, ensuring the chicken is tender and vegetables are cooked. While waiting, cook the noodles as instructed on the package. Once ready, place the noodles in a large serving bowl and top with the chicken, vegetables, and sauce. Finish by garnishing with parsley and Parmesan if desired.
