Boost taco nutrition and budget by using black beans for extra protein, allowing less ground chicken.
Ingredients:
  • 0.5 (12 ounce) package NO YOLKS® Broad Noodles
  • 0.5 pound lean ground chicken or turkey
  • 1 onion, finely chopped
  • 0.5 cup chopped green bell pepper
  • 0.5 cup frozen corn kernels
  • 2 teaspoons ground cumin
  • 0.25 teaspoon ground black pepper
  • 1 cup mild or medium salsa
  • 1 cup canned no salt added black beans, drained and rinsed
  • 0.75 cup sodium-reduced chicken broth
  • 0.5 cup Shredded Cheddar cheese, chopped green onions and low fat sour cream
Instructions:
  • Cook the noodles as instructed on the package.
  • In a large, deep nonstick skillet over medium-high heat, sauté the chicken with onion, green pepper, corn, chili powder, cumin, salt, and pepper until browned.
  • Combine salsa, black beans, and broth in the skillet and bring to a boil. Let it simmer for 10 minutes. Toss in the cooked noodles until they are well coated. Serve with shredded Cheddar cheese, green onions, sour cream, and extra salsa for garnish at the table.
