No Yolks Beef Stroganoff

Savory beef and mushrooms over rich No Yolks Noodles.
Ingredients:
  • 6 ounces NO YOLKS® Extra Broad Noodles
  • 1 tablespoon vegetable oil
  • 1 (8 ounce) package fresh sliced mushrooms
  • 1 small onion, thinly sliced
  • 1 pound flank steak or London broil, cut into thin strips
  • 3 tablespoons flour, divided
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 tablespoon butter
  • 1.25 cups beef broth
  • 6 tablespoons low-fat sour cream
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 2 tablespoons chopped Italian parsley
Instructions:
  • Cook the noodles as per the package instructions.
  • In a spacious nonstick skillet, warm up the oil. Toss in mushrooms, onion, and garlic. Sauté over medium heat, stirring often, for 5 minutes or until veggies are soft. Transfer the mixture from the skillet without washing it.
  • Place beef strips, 2 tablespoons of flour, salt, and pepper in a plastic bag and shake until beef is lightly coated. Melt butter in a skillet and add beef strips, browning on both sides over medium heat for about 2 minutes per side. Remove when deep brown. Pour beef broth into skillet, scraping up the browned bits. Reduce heat to low.
  • In a medium bowl, mix together sour cream, tomato paste, paprika, and 1 tablespoon flour. Slowly add 1/2 cup of hot broth while stirring. Pour the mixture back into the skillet and cook over low heat until smooth and slightly thickened. Add back the mushroom mixture and beef, heat for about 5 minutes. Serve over noodles and top with chopped parsley.
