Experience a Tuscan-inspired chicken and pasta dish in under 30 minutes.
Ingredients:
  • 325g dried spaghetti
  • 60ml (1/4 cup) Garlic & Rosemary Infused Extra Virgin Olive Oil
  • 500g chicken breast fillets, thinly sliced
  • 400g mixed cherry tomatoes, halved
  • 125ml (1/2 cup) light cooking cream
  • 80g baby spinach
  • 25g (1/3 cup) finely grated parmesan cheese
Instructions:
  • Boil the pasta in a large saucepan of salted water according to package instructions until al dente. Then, drain the pasta.
  • In a large deep frying pan over medium-high heat, heat 2 tablespoons of oil. Sauté the chicken, stirring, until browned and almost cooked through, about 2-3 minutes. Then add tomatoes and cook, stirring, until warmed through, about 2 minutes.
  • Stir in the cream and spinach until the spinach wilts. Mix in the cheese and spaghetti gently. Drizzle with the remaining 2 tablespoons of oil and toss to coat everything evenly. Season to taste and garnish with fresh basil if desired.
