Ingredients:
  • 2 punnet grape tomatoes
  • 1 red capsicum, seeded, sliced
  • 187.50 ml pimento-stuffed olives
  • 1/2 lemon, juiced
  • 4 small chicken breast fillets
  • 36.40 gm olive oil
Instructions:
  • Preheat oven to a toasty 180C.
  • Mix together juicy tomatoes, vibrant capsicum, savory olives, zesty lemon juice, and a drizzle of olive oil in a bowl.
  • In a skillet, warm 1 tablespoon of luscious olive oil. Season the chicken to your liking and sear for 2-3 minutes per side until beautifully golden. Glide the chicken into a baking dish for the next step.
  • Pour the tomato mixture into the same pan and sauté for 2-3 minutes. Pour the sautéed mixture over the chicken, toss to combine, season to taste, and bake for 15-20 minutes, turning the chicken once, until cooked through.
