Cheesy bacon chicken spaghetti with sun-dried tomatoes - a crowd-pleasing favorite!
Ingredients:
  • 1 (16 ounce) package spaghetti
  • 4 (5 ounce) skinless, boneless chicken breast halves, pounded to an even thickness
  • 1 teaspoon salt, or to taste
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 1 tablespoon olive oil
  • 3 slices bacon
  • 0.5 (8 ounce) jar sun-dried tomatoes packed in oil, drained and chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 pinch red pepper flakes, or more as needed
  • 1 cup milk
  • 1 tablespoon cornstarch
  • 2 cups chicken broth
  • 1 (8 ounce) package shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
Instructions:
  • 1. Boil a generous amount of salted water in a large pot. Cook spaghetti until al dente, stirring occasionally, for about 10 minutes. Drain pasta, saving 1 cup of pasta water, and transfer it to a big serving bowl.
  • Season both sides of the chicken with a generous sprinkle of salt and pepper while the pasta is cooking.
  • In a large pan over medium-high heat, sizzle the olive oil until shimmering. Gently add the chicken and sear each side until beautifully golden, around 3 minutes. Take the chicken out, dice it into bite-sized morsels, and keep to the side.
  • Fry bacon in the pan on medium-high heat, turning occasionally, until crispy and golden brown, approximately 10 minutes. Then, let the cooked bacon rest on paper towels to absorb excess grease before chopping into small pieces.
  • Combine sun-dried tomatoes, garlic, basil, and red pepper flakes in the bacon fat and sauté for 1 minute. Introduce chicken and bacon, lower heat to a gentle simmer, then blend in milk and cornstarch. Fold in chicken broth, mozzarella cheese, and Parmesan cheese, stirring until melted and thoroughly combined.
  • Gradually pour 1/2 cup of pasta water into the sauce while stirring, letting it thicken to your liking. Add more pasta water if necessary. Serve by pouring the sauce over the pasta.
