Smoked salmon and mixed pea pasta

Enjoy a spring-inspired, low-fat pasta dish bursting with fresh flavors.
Ingredients:
  • 350g spaghetti
  • 200g sugar snap peas, trimmed
  • 200g snow peas, trimmed, thinly sliced lengthways
  • 75g (1/4 cup) light sour cream
  • 1 tsp finely grated lemon rind
  • 42.00 gm fresh lemon juice
  • 20.00 ml chopped fresh dill
  • 1 bunch rocket, ends trimmed, chopped
  • 150g smoked salmon, thinly sliced
Instructions:
  • Cook the spaghetti in a large saucepan of salted boiling water following packet directions. Add the sugar snap peas and snow peas during the last minute of cooking. Drain the pasta and peas, then return to the pan.
  • In a bowl, mix sour cream, lemon zest and juice, dill, chives, and parsley. Add to the pasta and gently toss to combine. Season with pepper.
  • Arrange the peppery rocket in individual serving bowls. Finish with a generous serving of pasta and flavorful smoked salmon before serving.
