Vibrant salad with mixed greens, lentils, juicy salmon, and creamy goat cheese.
Ingredients:
  • 100g salad mix
  • 1 x 175g pkt Smoked Salmon portion, flaked
  • 1 x 400g can brown lentils, rinsed, drained
  • 50g semi-dried tomatoes
  • 1 large avocado, halved, stone removed, peeled, coarsely chopped
  • 120g goats cheese, crumbled
  • 250.00 ml fresh basil leaves, washed, dried
  • 60ml (1/4 cup) extra virgin olive oil
  • 21.00 gm fresh lemon juice
Instructions:
  • For the basil oil dressing, blanch the basil by placing it in a heatproof bowl and covering it with boiling water. Let it sit for 30 seconds, then immediately refresh it under cold running water and drain.
  • Combine fresh basil leaves and olive oil in a food processor, blending until smooth. Transfer the mixture through a fine sieve into a small bowl, discarding any remaining pulp. Add lemon juice and season with salt and pepper to taste.
  • Separate the salad leaves and salmon into serving bowls, then top with lentils, tomatoes, and avocado.
  • Drizzle the dressing over the dish and top with goats cheese. Season with pepper before serving.
