Delicious lentil salad with smoked salmon, red onion, and chives, perfect for any meal.
Ingredients:
  • 3 cups water
  • 1.5 cups dry lentils
  • 1 bouquet garni
  • 10 ounces smoked salmon, or more to taste
  • 0.5 large red onion, minced
  • 1 tablespoon snipped fresh chives
  • 0.25 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
Instructions:
  • In a large saucepan, bring water, lentils, and bouquet garni to a boil. Simmer, covered, over low heat until lentils are tender with a slight bite and minimal liquid remains, around 20 minutes. Let cool in the pan and remove the bouquet garni before serving.
  • Slice the salmon into small strips, measuring no more than half an inch in length. Combine the salmon with onion and chives in a large bowl, then mix in the cooled lentils.
  • Combine olive oil, vinegar, mustard, salt, and pepper in a small bowl and whisk until well mixed. Pour the dressing into the lentil mixture and stir until fully incorporated. Serve right away or chill in the refrigerator for 2 to 3 hours for the flavors to meld together.
