Smoked Salmon and Herb Frittata

Whip up a classy frittata in just 30 minutes, perfect for breakfast for four.
Ingredients:
  • 6 eggs
  • 2 tablespoons half-and-half or milk
  • 2 tablespoons chopped fresh chives (1/2-inch pieces)
  • 1 tablespoon coarsely chopped fresh dill weed
  • 1/4 teaspoon freshly ground pepper
  • 1 package (3 oz) sliced smoked salmon, cut into 1 1/2-inch pieces
  • 2 teaspoons olive oil
  • 1 package (3 oz) cream cheese, softened
  • Lemon wedges
Instructions:
  • Combine eggs, half-and-half, chives, dill, and pepper in a medium bowl. Carefully mix in the salmon.
  • In a nonstick skillet with sloping sides, heat oil on low. Pour in the egg mixture and add dollops of cream cheese using 2 teaspoons.
  • Cover and cook for 12 to 15 minutes until lightly browned and bottom is set, occasionally lifting edges to let uncooked egg mixture flow to the bottom. Slice into wedges and serve garnished with lemon.
