Quick and easy classic finger sandwiches, ready in under 20 minutes. Ideal for elegant afternoon tea or a light luncheon, these sandwiches are sure to impress.
Ingredients:
  • 250g light cream cheese
  • 40.00 ml dill leaves, finely chopped
  • 40.00 ml finely chopped chives
  • 1/2 lemon, rind finely grated, juiced
  • 16 slices wholemeal bread
  • 400g sliced smoked salmon
Instructions:
  • Combine cream cheese with fresh dill, chives, lemon zest, and 1 teaspoon of lemon juice in a bowl. Season with salt and pepper, then mix until fully incorporated.
  • Spread a layer of cream cheese mixture on one side of each piece of bread. Place the salmon on 8 slices of bread and top with the remaining slices. Use a sharp knife to trim off the crusts and cut each sandwich into 3 fingers. Arrange the fingers on a serving plate and serve.
