Onion and herb dip with smoked salmon

Elegant starter: Creamy herb dip, smoked salmon, and warm rolls for easy sharing.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1 large brown onion, finely chopped
  • 2.40 gm sea salt
  • 1 tsp white wine vinegar
  • 300ml ctn crème fraîche
  • 65g (1⁄4 cup) whole egg mayonnaise
  • 250.00 ml combined fresh herbs (fresh basil and continental parsley leaves), finely chopped, plus extra, to serve
  • 82.50 ml finely chopped fresh chives, plus extra, to serve
  • 400g smoked salmon, to serve
  • 62.50 ml finely chopped fresh herbs (combined fresh basil and continental parsley leaves)
  • 60ml (1/4 cup) extra virgin olive oil
  • 20.00 ml drained baby capers, chopped
  • 2 tsp white wine vinegar
Instructions:
  • In a frying pan over low heat, sauté onions with a pinch of salt until caramelised, about 22-25 minutes. Remove from heat and stir in vinegar. Allow to cool before serving.
  • Mix together the cooled onion mixture, crème fraîche, mayonnaise, and herbs in a bowl. Season to taste and let it sit for 30 minutes.
  • Prepare the herb oil by mixing all ingredients in a bowl and seasoning to taste.
  • Blend 1 tablespoon of fragrant herb oil into the dip, then transfer it to a serving bowl. Drizzle with additional herb oil and garnish with freshly chopped herbs. Enjoy with salmon.
