Elevate sausage dinner with brie cheese and sweet marmalade for a gourmet delight.
Ingredients:
  • 25g unsalted butter
  • 2 red onions, thinly sliced
  • 3 celery stalks, thinly sliced
  • 1 tsp fresh thyme leaves
  • 16.00 gm brown sugar
  • 250ml red wine
  • 50ml red wine vinegar
  • 62.50 ml (3 tbsp) redcurrant jelly
  • 6 good-quality thick pork or beef sausages
  • 125g brie, cut into 5mm slices, chilled
Instructions:
  • In a saucepan over medium heat, melt butter. Add onion and celery, cook while stirring for 5-6 minutes until softened. Stir in thyme and sugar, allow to caramelize for 5 minutes. Pour in wine and vinegar, cook for 10-15 minutes until thickened, stirring occasionally. Stir in redcurrant jelly until melted, then set aside.
  • Heat up the chargrill or barbecue on high. Grill the sausages for 6-8 minutes, turning occasionally, until they are cooked through. Slice each sausage lengthwise without cutting all the way through. Stuff each one with brie, then grill for an additional 2 minutes until the brie is slightly melted. Top with onion marmalade and serve alongside salad leaves.
