Creamy herb and onion scalloped potatoes made with mayo for a rich twist. Prep in the morning, bake for dinner.
Ingredients:
  • 3 tablespoons butter
  • 0.25 cup all-purpose flour
  • 1.75 cups low-sodium chicken broth
  • 2 tablespoons mayonnaise
  • 2 cloves garlic, minced
  • 0.75 teaspoon salt
  • 0.25 teaspoon dried parsley
  • 0.25 teaspoon poultry seasoning
  • 0.125 teaspoon ground black pepper
  • 0.25 cup chopped fresh chives
  • 5 large potatoes, peeled and thinly sliced
  • 0.75 cup chopped onion
Instructions:
  • Preheat oven to 325°F (165°C) and grease a 2 1/2-quart baking dish.
  • In a saucepan over medium heat, melt butter until shimmering. Stir in flour until a smooth paste forms. Gradually pour in broth while whisking continuously. Add mayonnaise, garlic, salt, parsley, poultry seasoning, and pepper. Keep stirring until the mixture thickens and bubbles, approximately 2 minutes.
  • Arrange an enticing layer of potatoes and onions in the baking dish. Delicately drizzle the flavorful broth mixture over the top before elegantly covering it with aluminum foil.
  • Bake in the preheated oven until potatoes are tender, for about 1 hour and 45 minutes. Uncover and bake until golden brown, for about 15 more minutes. Serve sprinkled with chives.
