Herbed Grilled Artichokes

Elevate artichokes by boiling them in white wine and herbs, then grilling for a smoky twist. Perfect for outdoor gatherings.
Ingredients:
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon dried thyme
  • 0.5 teaspoon liquid smoke flavoring
  • 1 teaspoon olive oil
  • 0.25 cup white wine
  • 2 lemon wedges
  • 4 artichokes, halved and choke scraped out
  • olive oil-flavored cooking spray
Instructions:
  • Fill a stockpot halfway with water. Mix in Italian seasoning, basil, thyme, liquid smoke, olive oil, salt, and white wine. Squeeze lemon wedges over the mixture and add them to the pot. Bring to a boil over medium heat. Add artichoke halves and boil until tender, about 20 to 30 minutes. Remove artichokes, drain them upside down on paper towels, and let them cool. Refrigerate until serving.
  • Preheat your outdoor grill to high heat and lightly oil the grate.
  • Drizzle cooled artichoke halves with cooking spray and grill until edges are slightly charred. Serve drizzled with melted butter.
