Vibrant red salmon salad with a zesty twist and a flavorful herb finish. Simply stunning!
Ingredients:
  • 400g pkt fresh cuts baby potatoes with butter and herbs
  • 210g tin red salmon, drained and flaked
  • 58.75 gm lite sour cream
  • 20.00 ml dill, chopped
  • 2 slices multigrain rye bread, cut into fingers to serve
  • 2 tsp capers (optional)
  • Handful salad leaves
  • 2 green onions (shallot), chopped
Instructions:
  • Microwave the potatoes as directed on the package. Cut them in half and add to a bowl with flaked salmon, salad greens, and sliced green onions.
  • Combine sour cream, dill, and capers (if desired) with the potato mixture. Toss to coat evenly. Portion into two containers and include a fork for an easy grab-and-go lunchbox meal.
