Popular Russian salmon salad, perfect for picnics or appetizers, always a crowd favorite!
Ingredients:
  • 3 medium baking potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 (16 ounce) can salmon, drained
  • 1 cup mayonnaise, or as needed
  • 1 tablespoon chopped fresh parsley, for garnish
Instructions:
  • Add eggs to a saucepan and cover with cold water. Bring to a boil, then immediately remove from heat. Let the eggs sit in the hot water for 10 to 12 minutes. Once done, remove, cool, and peel.
  • As the eggs cook, add potatoes to a saucepan and cover with water. Boil for 10-15 minutes until tender. Drain and set aside.
  • In a skillet over medium heat, saute onions in oil until golden brown and translucent, approximately 10 minutes.
  • Break up the salmon and layer it at the bottom of a glass baking dish. Add the sauteed onions on top of the salmon, followed by a light layer of mayonnaise. Arrange the potatoes over the onion layer, adding enough mayo for moisture. Layer the sliced eggs over the potatoes, then top with mayo and garnish with parsley. Optionally, reserve some eggs to sprinkle on top. Chill for 1 hour before serving.
