Russian Coulibiac: Fish and rice in a flaky pastry. A budget-friendly family dinner.
Ingredients:
  • 110g white long-grain rice
  • 400g cooked salmon, flaked
  • 60g butter
  • 1 onion, finely diced
  • 30g Swiss brown mushrooms, chopped
  • 20.00 ml chopped dill
  • Zest and juice of 1/2 lemon
  • 2 hard-boiled eggs, peeled, chopped
  • 2 x 375g packets of block puff pastry
  • 1 egg, lightly beaten
Instructions:
  • Preheat your oven to 180°C.
  • Bring a large saucepan of water to a boil. Cook the rice according to package instructions, then drain well. Combine with the salmon in a bowl and set aside.
  • In a frying pan over medium heat, melt butter. Sauté onion until soft (2-3 minutes), then add mushrooms and cook for an additional 2 minutes. Combine with cooked rice, dill, lemon zest and juice, and egg. Season generously with salt and pepper.
  • Roll out the pastry block to a 28 x 20cm rectangle. Transfer it to a baking tray lined with baking paper. Prick the surface all over with a fork and brush with beaten egg. Bake until golden (10-15 minutes). Let it cool. Add the filling on top, then roll out the second pastry block to cover the base completely. Use it to enclose the filling, tucking any excess pastry underneath.
  • Coat with egg wash and bake until beautifully golden for approximately 30 minutes.
