Simplified coulibiac with puff pastry and white fish - just as delicious, made quick and easy.
Ingredients:
  • 5.00 gm ground cumin
  • 4 x 200g pieces blue-eye trevalla fillet, skinned, pin-boned
  • 2 sheets frozen puff pastry, thawed
  • 1 egg, lightly beaten
  • 80ml (1/3 cup) olive oil
  • 2 bunches Dutch (baby) carrots or 4 carrots, halved lengthwise, then widthwise
  • 10.00 gm caster sugar
  • 2.50 gm sweet paprika
  • 60ml (1/4 cup) extra virgin olive oil
  • 1 lemon, zested, juiced
  • 2 red onions, finely chopped
  • 80g (2/3 cup) Sicilian green olives, chopped
  • 40.00 ml finely chopped mint leaves
  • 40.00 ml finely chopped flat-leaf parsley
Instructions:
  • Combine sugar, paprika, oil, lemon zest, and juice in a bowl, whisk until sugar dissolves. Add onions, olives, mint, parsley, salt, and pepper. Toss to combine and let flavors develop.
  • To make the coulibiac, preheat the oven to 200C. Sprinkle ½ teaspoons cumin over each piece of fish. Cut the pastry into 4 strips measuring 10cm x 20cm each. Ensure the width matches the length of the fish; trim if needed. Lightly brush a strip with egg, place a piece of fish at one end, then tightly wrap to enclose. Repeat with the remaining strips, egg, and fish.
  • In a large frying pan over medium-high heat, heat 2 tablespoons of oil. Cook the coulibiac in batches, turning occasionally, until golden brown, about 4 minutes per batch. Then, transfer the cooked coulibiac to a baking paper-lined oven tray and bake for 8 minutes, or until the fish is cooked through and the pastry is beautifully crisp (the pastry won't puff up since it has been pan-fried).
  • Preheat a chargrill pan over high heat. Toss carrots with 2 tablespoons of oil in a bowl. Grill, turning occasionally, for 8 minutes until carrots are charred and tender.
  • Split the coulibiac in half, plate it, and garnish with salsa and carrots for a delightful presentation.
