Poached salmon potato salad

Indulge in a flavorful salmon and potato salad rich in Omega-3 for a nutritious boost!
Ingredients:
  • 700g potatoes, scrubbed, cut diagonally into 1cm-thick slices
  • 500.00 gm warm water
  • 600g thick fresh salmon steaks
  • 125g tub reduced-fat tzatziki dip
  • 21.00 gm fresh lemon juice
  • 40.00 ml dill, finely chopped
  • 50g snow pea sprouts
  • lemon wedges, to serve
Instructions:
  • Boil potatoes in seasoned water for 8 to 10 minutes until tender.
  • Heat warm water in a frying pan until boiling. Lower the heat to medium-low and gently place the salmon in the pan. Cover and cook for 5 to 6 minutes until the salmon is cooked through. Then, transfer the salmon to a plate.
  • Drain the potatoes and transfer them to a large bowl. Mix in the tzatziki, lemon juice, and dill. Season with a sprinkle of pepper and gently toss everything together.
  • Break the salmon into big pieces, removing the skin and bones. Plate the sprouts, potato salad, and salmon. Accompany with lemon wedges for serving.
